The oddballs worth the drive
Giraffe Ranch is exactly what it sounds like. Rated 4.7 from 753 reviews, this is a drive-through and guided safari operation where you can feed giraffes from a vehicle. Dogs are permitted in the car with you on the drive-through portion. Your dog will not know what to make of a giraffe. That is the point. It is a strange, memorable outing and one of the highest-rated things in Pasco County.
On the same property, Scream-A-Geddon Horror Park and Snowcat Ridge share an address at 27839 St Joe Rd. Scream-A-Geddon is a haunted attraction rated 4.4 from 8,288 reviews—busy, loud, and not for nervous dogs. Snowcat Ridge is a winter-themed snow park rated 4.0 from 5,029 reviews, open in the colder months. Neither is a dog destination, but both are nearby if you are already out that way. Skip them with a nervous pup.
Eat, drink, and let the dog be the center of attention
Downtown Dade City is small and walkable. Dade City Brew House (4.7, 253 reviews) and The Wine Library Dade City (4.9, 158 reviews) both sit on 7th Street, across from the courthouse square. Patio seating is the move. Water bowls appear. People will ask about your dog. This is a town where the Kumquat Festival takes over the streets every January, so a dog on a leash is hardly a disruption.

Handcart Garden Center (4.9, 128 reviews) is worth a visit if you like plants and have a dog patient enough to sniff around a nursery.
One note: this is Florida in the summer. It is hot. Pavement burns paws. The Withlacoochee River Park is best in the morning; the trail is best before 10 a.m. Carry water for both of you.
Dade City will not try to sell you on itself. It has a courthouse square, a train depot, a 1913 locomotive at the Pioneer Florida Museum, and a festival for a fruit you have probably never eaten. It does not need to impress you. But your dog will have a good time here, and that is a better endorsement than any slogan.
